The old grill is being renovated for the new casual restaurant, which is slated to open in a few weeks. “We are changing to make it a modern Japanese house,” said On Augsondthung, who co-owns the new restaurant with her husband and chef, John Augsondthung. He wants to open it quickly while the weather is cooler. “People need hot soup,” he said.

Mr Augsondthung attended a ramen cooking school in Thailand, where the couple are from, and then trained with a master ramen cook in California, Ms Augsondthung said. “So he learned a lot of techniques and secret ingredients to make it very authentic,” she said.

“Customers can sit on the terrace and order Fuji sushi and Yoko-San ramen and enjoy them on the terrace,” Ms. Augsondthung said.

The couple also operate Araya Sushi Asian Grill, which they opened in 2014 at the Uptown Center on Immokalee Road in northern Naples. They plan to launch their fourth local restaurant, Fuji Sushi Bar & Asian Bistro’s second location, by February 1 at The Pointe at Founders Square on Immokalee Road and Collier Boulevard in northern Naples.
