How to make Kesar Gujiyas? Pankaj Bhadouria shares an easy recipe
Do you like to savor delicious gujiyas during Holi? It’s a traditional candy that we look forward to this time of year. Almost every household in North India prepares this crispy, golden dumpling to mark the festival of colours. We will be celebrating Holi in a few days and so it is time to get ready to prepare these sweet delights at home. Gujiyas can be prepared in different ways, including the dried fruit one or mawan gujiya. Ingredients:
1) Flour – 2 cups
2) Ghee – 4 tbsp
3) Water – 1/4 cup
4) Khoya – 2 cups
5) Caster sugar 1/2 cup
6) Chironji – 2 tbsp
7) Raisins – 2 tbsp
8) Saffron – 1/4 tbsp
9) Frying Oil
Here is how you can make kesar gujiyas:
1) First, take the mentioned amount of flour and add about 4 tablespoons of ghee to it. Rub it well until it looks like breadcrumbs. Now, with the help of a little water, knead a firm but smooth dough.
2) Take a separate pan and put khoya in it. Cook the khoya over medium heat until lightly colored and dry.
3) It’s time to prepare the stuffing. To do this, take a plate and empty the cooked khoya into it. Put the caster sugar followed by the chironji, the raisins and finally the saffron. Mix everything very well.
4) Here is the last step, roll out marble sized balls
to puris 1/4 cm thick. Put each of them into a gujiya mold one by one. Apply the flour slurry to the edges as shown in the video. Place 2 tablespoons of filling in each of them and press well. Fry the gujiyas in medium hot oil until lightly colored. Your traditional Holi recipe is ready.
