Viceroy Santa Monica unveils Sugar Palm, a new restaurant now open as part of a dramatic renovation of beloved iconic beachfront property

Sugar Palm, Viceroy Santa Monica’s ultimate indoor / outdoor coastal dining concept, is now open for daily brunch and dinner. The restaurant, which includes an indoor lounge, outdoor patio, cafe, restaurant and poolside bar, is on the cusp of a radical $ 21 million overhaul of the iconic waterfront hotel. Los Angeles Sea by award-winning San Francisco design firm EDG, recently named one of the Top 15 City Hotels in the Continental US by Travel + Leisure and # 2 LA Resort in the Condé Nast Traveler 2021 Readers’ Choice Awards.
As a vibrant social hub of Viceroy, Sugar Palm offers a California Coastal menu curated by Chef Jason Francisco (Comme Ca, Cut, Eataly and The Raymond) who draws inspiration from his diverse origins living in Singapore, Italy, Germany. , the Netherlands and Turkey. , and Hawaii.
“After a year of social and emotional distancing, I hope Sugar Palm is a place to come together and break bread,” said Chef Francisco. “Given our location in Santa Monica, I wanted to create a relaxed and fun, yet sophisticated and luxurious menu and dining experience. It is a very personal menu for me as it is influenced by the many places in the world where I have had the opportunity to live and experience.
Rooted in using the freshest ingredients possible with an emphasis on locally sourced produce, Chef Francisco and his team use California suppliers like Niman Ranch in Northern California for meat, Fish King in Glendale for sourcing. almost all of the seafood in Long Beach and Santa Barbara, and Scarborough Farms in Oxnard for produce.
The Sunset Menu, available from 3:00 p.m. to 10:00 p.m., transports guests on a journey along California’s diverse coastline, complete with kombu, yellowtail flounder, striped bass, oysters, tai snapper and more. the Pacific Ocean. Peruvian scallops – ceviche style, green apple mignonette, wakame
Ocean Chowdah – King salmon sashimi, clams, sweet potato, lobster tomato broth, grilled sourdough

Chef Francisco complements the Sunset menu with indoor dishes made with Jidori free-range chicken and USDA Prime beef, including:

The Sunrise menu, available from 6:30 a.m. to 2:30 p.m., includes elevated versions of breakfast classics and savory lunch options with a coastal twist. Brunch highlights include
Omnivorous frittata – Red onions, spinach, young heirloom tomatoes, zucchini and squash
La Frenchie – Brioche, tiramisu cream, mixed berry jam, cocoa

The Coastal Avo Toast – Norwegian lobster tail, spicy mayo, unagi sauce, crushed avocados, grilled sourdough, house vegetables

In conjunction with Chef Francisco’s menu, Mario Leal-Cruz, Jr., Regional Director of Food & Beverage for Viceroy Hotel Group, curated a collection of cocktails featuring homemade syrups and juices. The cocktail menu is inspired by Leal-Cruz’s Mexican heritage, found in regional spirits and indigenous ingredients such as agave, mezcal, and Ancho Reyes, and his current hometown of Santa Monica, seen in the colors found in the SaMo Sunset – reminiscent of the coastal sky at nightfall. The ingredients also come from Viceroy Santa Monica’s backyard at the local farmer’s market. Highlights include:

Sugar Palm’s design reflects the laid-back elegance of Santa Monica, seamlessly transitioning inside and out – from the lounge to the wrap-around bar, patio, and seven cabanas, including a dedicated dining cabin that seats up to to eight people. Outdoor fireplaces and a colorful mural – “IJEOMA” by local artist Evelyn Leigh – immediately draw guests to dinner under palm trees on the patio. The interior living room’s wood accents are reminiscent of the nearby Santa Monica Pier, while artist Monica Perez’s colorful abstracts reinforce Sugar Palm Ocean Avenue’s plaza as the social hub of Viceroy Santa Monica.
The restaurant will also host a variety of exciting activations and collaborations with local businesses, including succulent workshops led by The Juicy Leaf.
